Black-Eyed Pea Soup

ingredients
Nonstick cooking spray
1 cup chopped celery
1 green bell pepper, chopped
1 cup chopped onion
1 can (10 oz.) chopped tomatoes and green chilies
2 cans (15.5 oz. each) no-salt-added
black-eyed peas
2 cups fat-free, low-sodium beef broth

preparation
7 servings
Serving size: 1 cup

1. In a large nonstick saucepot coated with nonstick cooking spray, sauté the celery, green pepper, and onion until tender, about 5 to 7 minutes.
2. Add the remaining ingredients and bring to a boil, then reduce the heat and simmer, covered, for about 20 minutes.
