Easy Crab Soup

Nonstick cooking spray
1 Tbsp. butter
1 onion, finely chopped
2 cups fat-free, low-sodium chicken broth
1 can (12 oz.) fat-free evaporated milk
1 lb. white or back fin lump crabmeat,
picked through for shells
1/2 cup finely chopped green onions

1. In a nonstick saucepan coated with nonstick cooking spray, melt the butter over medium heat, and sauté the onion for 5 minutes, or until tender.
2. Add the broth and bring to a boil. Reduce the heat, and add the milk. Fold in the crabmeat, cooking for 3 to 4 minutes, or until well heated. Serve with chopped green onions.
