4 cups fresh packed spinach
½ cup (2 oz) crumbled reduced-fat feta cheese
2 scallions, sliced
½ cup low-fat cottage cheese
¼ cup light mayonnaise
1 Tablespoon prepared horseradish
1 Tablespoon chopped fresh dill
1 teaspoon fresh lemon juice
¼ teaspoon salt- omit the salt to greatly reduce the sodium in this recipe!
¼ teaspoon black pepper
In a food processor or blender, blend all of the ingredients until the mixture is smooth, scraping down the sides of the bowl as needed.
