Although summer is coming to a close and kids are going back to school, the Georgia summer heat is still going strong. This dessert is will help keep you cool without packing on a lot of extra calories or carbohydrates.
1 package (4 serving size) sugar-free strawberry gelatin
½ cup boiling water
2 cups fresh sliced strawberries
½ cup reduced-fat cream cheese
½ cup cold water
¼ teaspoon almond extract
1 cup reduced-fat whipped topping + additional for garnish
1. Place the gelatin in a small bowl. Pour boiling water over gelatin and stir until completely dissolved.
2. Pour gelatin mix into a blender; add 1 cup sliced strawberries, cream cheese, cold water and almond extract.
Blend until completely smooth (about 1 minute).
3. Pour mixture into a medium bowl. Wisk whipped topping into mixture
(make sure gelatin does not settle to the bottom).
4. Pour mouse into six serving cups. Refrigerate for at least 2 hours or until mousse sets. Top mouse with remaining strawberries and an optional dollop of whipped topping.
